Szechuan Court at The Ambassador Hotel Taipei is the only 5-star restaurant in Taiwan offering Sichuan cuisine. The menu includes dishes from every major culinary region in China, and the master chefs have at least 20 years of experience under their belt. Despite their skill, the chefs will go on an annual sabbatical overseas to study overseas cuisine and introduce relevant techniques to provide guests with creative gastronomic delights. For example, the master chef traveled to the city of Chengdu in Sichuan to study the art of mala (numbing and spicy flavor), and acquiring the techniques to prepare a mapo doufu (spicy tofu) based on a 142-year old recipe, replacing the minced pork that every Taiwanese is used to with minced beef instead, transforming this common dish into a featured attraction of the restaurant. This dedication echoes the spirit authenticity and innovation of Szechuan Court at the Ambassador.
